Lazy Day Oatmeal Cake




INGREDIENTS:
1 cup uncooked rolled oats ( instant or regular, I used rolled oats)
1 1/4 cups boiling water
1/2 cup butter or 1/2 cup margarine
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
TOPPING
1/4 cup butter or 1/4 cup margarine, melted
1/2 cup brown sugar
3 tablespoons cream or 3 tablespoons milk
3/4 cup flaked coconut
1/3 cup chopped nuts (optional)
DIRECTIONS
In a shallow bowl soak oats in boiling water for 20 minutes.
Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.
Beat in eggs and vanilla.
Sift and measure flour, sifting again with the soda and spices.
By this time the oats will be soaked and cool.
Remove beaters from creamed mixture and fold in soaked oats.
Sift flour mixture over and fold in.
Turn in a buttered 9×9″ pan and bake at 350°F for 40-50 minutes .
Mix all the topping ingredients.
Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.

Homemade lasagna

Ingredients 1 (16 ounce) package lasagna noodles 1/2 pound ground pork 1/2 pound lean ground beef 1 (8 ounce) can tomato sauce 1 (28 ounce) can crushed tomatoes 1 tablespoon chopped fresh parsley 1 clove garlic, crushed 1/2 teaspoon dried oregano 1/2 cup minced onion 1/8 teaspoon white sugar 1 1/2 teaspoons dried basil 1 1/2 teaspoons salt 1 pound small curd cottage cheese 3 eggs 3/4 cup grated Parmesan cheese 2 teaspoons salt 1/4 teaspoon ground black pepper 1 pound shredded mozzarella cheese Directions Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain and set aside. Place pork and beef in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in tomato sauce, crushed tomatoes, parsley, garlic, oregano, onion, sugar, basil and salt. Simmer over medium-low heat for 30 minutes, stirring occasionally. In a large bowl, combine cottage cheese, eggs, Parmesan cheese, parsley, salt and pepper. In a 9×13 inch baking dish, place 2 layers of noodles on the bottom of dish; layer 1/2 of the cheese mixture, 1/2 of the mozzarella cheese and 1/2 of the sauce; repeat layers. Cover with aluminum foil and bake in preheated oven for 30 to 40 minutes. Remove foil and bake for another 5 to 10 minutes; let stand for 10 minutes before cutting; serve.

Lemon Pepper Honey Fried Chicken

Ingredients: 1 whole chicken, cut into pieces 1 tablespoon of Kosher salt 1/2 tablespoon of fresh back pepper 1 packet of Sazon seasoning 1/2 tablespoon of granulated garlic powder the zest of 2 lemons 6 to 8 cups of vegetable or canola oil 1 egg 1/2 cup of buttermilk 3 cups of all purpose flour 1 1/2 cups of cornstarch 1/2 cup of honey the juice of 2 lemons 1 lemon sliced fresh cracked black pepper Directions: Season the chicken liberally with salt, pepper, Sazon, lemon zest and garlic powder. Then, in a large bowl combine the flour and cornstarch. Allow the chicken to marinate for at least a half hour. Meanwhile, add the oil to a skillet or deep pot and get it hot – about 365 degrees. In the same bowl as the chicken, add the egg and buttermilk and combine well. Then, dredge each piece of chicken in the cornstarch & flour mixture and shake off the excess. Then, drop each piece of chicken into the oil and fry until golden brown. Drain on paper towels to remove excess oil. To make the glaze, add the honey, lemon juice, sliced lemons, and black pepper to a pot and bring to a boil. Then, pour over the cooked chicken and enjoy.

Delicious Beef Stew

Ingredients: 2 tbsps of olive oil. 2 pounds of cubed beef stew meat. 2 tbsps of all purpose flour. 4 cups of water. 2 cups of beef broth. ½ tsp of salt. ½ tsp of ground black pepper. 4 cups of cubed potatoes. 2 cups of chopped carrots. 1 tsp of dried rosemary. 1 cup of fresh corn kernels. 1 cup of fresh green beans cut into 1” pieces. 1 cup of chopped turnip (optional). 2 cups of chopped fresh tomatoes (optional). Directions: In a large pot, heat the oil and stir in the beef and flour until browned. Pour in the water and broth and season with salt and pepper. Bring to a boil, reduce the heat and simmer for 1 hour. Mix in the potatoes, carrots and rosemary and simmer for 1 to 2 more hours. Mix in the corn, green beans and simmer for 30 minutes.

Homemade Lemon Meringue Pie!

Ingredients: 1 cup white sugar 2 tablespoons all-purpose flour 3 tablespoons cornstarch 1/4 teaspoon salt 1 1/2 cups water 2 lemons, juiced and zested 2 tablespoons butter 4 egg yolks, beaten 1 (9 inch) pie crust, baked 4 egg whites 6 tablespoons white sugar Instructions: Preheat oven to 350 degrees To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell. To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust. Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Delicious Brown Sugar Chops

To Make this Recipe You’Il Need the following ingredients: Ingredients 6 pork chops 6 tbsp brown sugar 6 tbsp margarine 1 tbsp soy sauce Directions Preheat oven to 350 degrees F (175 degrees C). Place the chops in a 9×13 inch baking pan. Place 1 tablespoon of brown sugar on top of every chop. Place 1 tablespoon of margarine on top of the brown sugar. Sprinkle chops with soy sauce. Cover pan with foil and bake in preheated oven for 45 minutes. Remove foil and bake for an additional 15 minutes, until browned.

Boston Baked Beans

2 cups navy beans 1/2 pound bacon 1 onion, finely diced 3 tablespoons molasses 2 teaspoons salt 1/4 teaspoon ground black pepper 1/4 teaspoon dry mustard 1/2 cup ketchup 1 tablespoon Worcestershire sauce 1/4 cup brown sugar Add all ingredients to list Directions Prep 30 m Cook 4 h Ready In 5 h Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid. Preheat oven to 325 degrees F (165 degrees C). Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion. In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil. Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.
